When I was a child, I would unexpectedly find chickens living in my kitchen. Chickens that my uncle had brought from his farm, and on several occasions, I would give them names as if they were my new pets. I will never forget growing up surrounded by animals that made the days feel better. I will never forget that in my home, ripe plantains were always there and will always be. Plantains for breakfast, lunch, and dinner. Fried, grilled, and in stews.
